kefir? The kefir grains have to have some nutrients in order to grow. There is nothing in water alone that will allow them to grow.

to an entire can of Carnation milk and I'm curious if this is going to make probiotics ? or have I made a boo boo ?
from milk kefir, which uses milk as the starting material. In water kefir the kefir grains ferment the added sugar (glucose plus any fruit sugars). In milk kefir the kefir grains ferment lactose (the type of sugar that is in milk).
Although one article I read on the difference between water kefir (not milk based kefir) and milk kefir made a big deal about needing different kinds of kefir grains, that was not my experience. I'm guessing you could use any kind of fruit juice to make an excellent kefir.
